Air movers without dehumidification just move the problem
The two pieces of equipment do different jobs. Air movers accelerate evaporation, pushing moisture out of wet materials and into the air of the room. Dehumidifiers remove that moisture from the air and out of the building. Run the first without enough of the second and you have converted a wet floor into a humid house, and that humidity condenses on the coldest surface it can find — often inside a wall cavity you were not treating.
A drying setup that is all fans and no dehumidification is a recognisable failure mode, and it is visible to a homeowner. Count the equipment and ask what the dehumidifier capacity is relative to the space.
You are entitled to the numbers
Structural drying is the one stage of a restoration a property owner can verify objectively without any expertise, simply by asking for the documentation. There should be a moisture map, baseline readings from unaffected material, a target, and a daily log showing the trend.
If that exists, the work can be trusted and the record supports the insurance claim. If the answer is that the equipment ran for a few days and it seems dry, there is no way for anyone — including the provider — to know whether the rebuild is being built on dry material.
